Scrambled Eggs with Veggies and Toast

Delicious scrambled eggs mixed with fresh veggies served with toast and turkey bacon for a hearty breakfast.

Ingredients

  • 4 large eggs
  • 1 cup spinach
  • 1/2 cup diced bell peppers
  • 1/4 cup diced onions
  • 2 slices turkey bacon
  • 2 slices whole grain bread
  • 1 tablespoon butter
  • salt to taste
  • pepper to taste

Instructions

  1. In a skillet, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same skillet, add butter and sauté the onions and bell peppers until soft.
  3. Add spinach and cook until wilted.
  4. In a bowl, whisk the eggs with salt and pepper.
  5. Pour the eggs into the skillet with veggies and cook, stirring gently until scrambled to your liking.
  6. Meanwhile, toast the bread.
  7. Serve the scrambled eggs on toast with crispy turkey bacon on the side.
