  • 1/2 cup feta cheese, crumbled

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and peel the sweet potatoes, then slice them into 1/2 inch rounds.
  3. In a large bowl, toss the sweet potato rounds with olive oil, salt, and pepper until evenly coated.
  4. Arrange the sweet potato rounds on a baking sheet in a single layer.
