Roasted Garlic Soup – Rich and Creamy

A deliciously rich and creamy roasted garlic soup, perfect for cozy evenings.

  • 2 heads garlic
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt to taste
  • Black pepper to taste
  • Fresh herbs for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the tops off the garlic heads and drizzle with olive oil. Wrap in foil and roast for 30-35 minutes.
  3. In a pot, sauté the chopped onion until translucent.
  4. Add the roasted garlic, sauté briefly, then add the vegetable broth.
  5. Simmer for 15 minutes, then blend until smooth.
  6. Stir in the heavy cream and heat through. Season with salt and pepper.
  7. Serve hot, garnished with fresh herbs.
