Roasted Cauliflower Soup

A rich and creamy roasted cauliflower soup that is both satisfying and healthy.

Ingredients

  • 1 large head of cauliflower
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt to taste
  • Pepper to taste
  • 1 teaspoon thyme

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Cut the cauliflower into florets and toss with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden brown.
  3. In a large pot, sauté the onion and garlic until translucent.
  4. Add the roasted cauliflower and vegetable broth to the pot. Bring to a boil and then simmer for 10 minutes.
  5. Blend the soup until smooth, then stir in the heavy cream and thyme. Season with additional salt and pepper if needed.

Notes

  • For a vegan option, substitute heavy cream with coconut milk.
  • Serve with crusty bread for a complete meal.
