Rich Spinach Artichoke Spaghetti Squash

A creamy and flavorful dish combining rich spinach and artichokes with spaghetti squash.

  • 1 medium spaghetti squash
  • 2 cups fresh spinach
  • 1 cup artichoke hearts, chopped
  • 1 cup cream cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the spaghetti squash in half and scoop out the seeds.
  3. Place the squash halves cut-side down on a baking sheet and roast for 40-45 minutes.
  4. In a mixing bowl, combine spinach, artichoke hearts, cream cheese, Parmesan, garlic, salt, and pepper.
  5. Remove the squash from the oven, let it cool, then scrape the flesh with a fork to create strands.
  6. Mix the squash strands with the spinach and artichoke mixture.
  7. Return the mixture to the squash halves and bake for an additional 15 minutes.

Notes
