Red Velvet Cake with Mascarpone Buttercream

  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 tablespoon unsweetened cocoa powder
  • 1 cup vegetable oil
  • 1 cup buttermilk, at room temperature
  • 2 large eggs, at room temperature
  • 2 tablespoons red food coloring
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon white vinegar
  • 1 cup mascarpone cheese
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cocoa powder.
  3. In another bowl, mix the oil, buttermilk, eggs, food coloring, vanilla extract, and vinegar.
  4. Combine the wet and dry ingredients, mixing until just combined.
  5. Divide the batter evenly between the prepared cake pans.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the cakes cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
  8. For the buttercream, beat the mascarpone and softened butter together until smooth.
  9. Gradually add the powdered sugar and vanilla extract, mixing until combined and fluffy.
  10. Once the cakes are completely cool, layer the cakes with the mascarpone buttercream in between and on top.
  11. Decorate as desired and serve.

  • For best results, ensure all ingredients are at room temperature before starting.
  • Feel free to adjust the amount of red food coloring to achieve your desired depth of color.
