- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 tablespoon unsweetened cocoa powder
- 1 cup vegetable oil
- 1 cup buttermilk, at room temperature
- 2 large eggs, at room temperature
- 2 tablespoons red food coloring
- 1 teaspoon pure vanilla extract
- 1 teaspoon white vinegar
- 1 cup mascarpone cheese
- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract (for frosting)
- Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cocoa powder.
- In another bowl, mix the oil, buttermilk, eggs, food coloring, vanilla extract, and vinegar.
- Combine the wet and dry ingredients, mixing until just combined.
- Divide the batter evenly between the prepared cake pans.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
- For the buttercream, beat the mascarpone and softened butter together until smooth.
- Gradually add the powdered sugar and vanilla extract, mixing until combined and fluffy.
- Once the cakes are completely cool, layer the cakes with the mascarpone buttercream in between and on top.
- Decorate as desired and serve.
