Raspberry Tiramisu: A Blissful Twist on the Classic Dessert

Raspberry Tiramisu

A delightful raspberry twist on the traditional tiramisu that combines the creaminess of mascarpone with fresh raspberries.

Ingredients

  • 1 cup fresh raspberries
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup brewed coffee, cooled
  • 24 ladyfinger cookies

Instructions

  1. In a large bowl, whip the heavy cream until soft peaks form.
  2. In another bowl, mix the mascarpone cheese, powdered sugar, and vanilla extract until smooth.
  3. Fold the whipped cream into the mascarpone mixture gently.
  4. Dip the ladyfingers in the cooled coffee quickly, then layer them at the bottom of a dish.
  5. Spread half of the mascarpone mixture over the ladyfingers.
  6. Add a layer of fresh raspberries on top of the mascarpone.
  7. Repeat the layers with the remaining ladyfingers, mascarpone mixture, and raspberries.
  8. Chill in the refrigerator for at least 4 hours before serving.

Notes

  • For extra flavor, add a splash of raspberry liqueur to the coffee.
  • Using frozen raspberries is an option if fresh ones are not available.
