Quick Sautéed Zucchini and Mushrooms

A simple and delicious side dish perfect for quick weeknight meals.

Ingredients

  • 2 medium zucchinis, sliced
  • 8 ounces mushrooms, sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add garlic and sauté for about 30 seconds until fragrant.
  3. Add sliced mushrooms and zucchini, and season with salt and pepper.
  4. Sauté for about 5-7 minutes, stirring occasionally, until vegetables are tender.
  5. Remove from heat and garnish with fresh parsley.

Notes

  • For extra flavor, add a pinch of red pepper flakes.
  • Serve immediately as a side dish or over pasta.
