1 cup pancake mix
1/2 cup canned pumpkin puree
1/2 cup milk
1/2 teaspoon pumpkin spice
1 egg
cooking spray or butter for frying
4 slices turkey bacon
Instructions
In a bowl, mix together pancake mix, pumpkin puree, milk, pumpkin spice, and egg until well combined.
Heat a non-stick skillet over medium heat and lightly grease with cooking spray or butter.
Pour 1/4 cup of the batter onto the skillet for each pancake.
Cook until bubbles form on the surface, then flip and cook until golden brown.
In another pan, cook the turkey bacon until crispy.
Serve pancakes warm with turkey bacon on the side.
Notes
