Quick Green Bean Potato Salad

A delicious and easy salad that combines fresh green beans, potatoes, and turkey bacon for a delightful twist.

Ingredients

  • 4 cups green beans, trimmed
  • 2 cups baby potatoes, halved
  • 4 slices turkey bacon, cooked and crumbled
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • Salt to taste
  • Pepper to taste

Instructions

  1. Boil baby potatoes in salted water until tender, about 10-15 minutes. Drain and let cool.
  2. Blanch green beans in boiling water for 2-3 minutes until bright green, then immediately transfer to an ice bath.
  3. In a large bowl, combine olive oil, apple cider vinegar, Dijon mustard, salt, and pepper.
  4. Add cooled potatoes, green beans, and crumbled turkey bacon to the bowl and toss to combine.
  5. Serve chilled or at room temperature.
