  • 2 tablespoons red curry paste
  • 1 can (13.5 oz) coconut milk
  • 1 cup chicken broth
  • 1 tablespoon fish sauce
  • 1 tablespoon sugar
  • 2 cups mixed vegetables (bell peppers, carrots, peas)
  • 2 tablespoons lime juice
  • Fresh basil for garnish

Instructions

  1. In a large pan, heat the red curry paste over medium heat until fragrant.
  2. Add the sliced chicken and cook until browned.
  3. Stir in the coconut milk and chicken broth and bring to a simmer.
  4. Add the fish sauce, sugar, and mixed vegetables.
  5. Cook until the vegetables are tender and chicken is cooked through.
  6. Stir in lime juice before serving.
  7. Garnish with fresh basil.

Notes

  • This curry can be adjusted for spice level by adding more or less curry paste.
