1 teaspoon vanilla extract
Instructions
Preheat your oven to 350°F (175°C).
In a bowl, mix together flour, baking powder, baking soda, pumpkin pie spice, and salt.
In another bowl, combine the softened butter, brown sugar, and granulated sugar until creamy. Add the pumpkin puree, egg, and vanilla extract, mixing well.
Gradually add the dry ingredients to the wet mixture until combined.
Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
Bake for 12-15 minutes or until the edges are lightly golden.
Allow to cool on a wire rack before serving.
