Potato Soup So Creamy It Melts Away Every Worry

This creamy potato soup will melt away every worry, topped with delicious turkey bacon.

Ingredients

  • 4 cups diced potatoes
  • 1 cup diced onions
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup cooked turkey bacon, crumbled
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons butter
  • 1 tablespoon chopped fresh parsley

Instructions

  1. In a large pot, melt the butter over medium heat. Add the onions and sauté until softened.
  2. Add the diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until the potatoes are tender.
  3. Stir in the heavy cream and season with salt and pepper. Cook for an additional 5 minutes.
  4. Use an immersion blender to puree the soup to your desired consistency.
  5. Add the crumbled turkey bacon and stir well.
  6. Serve hot, garnished with fresh parsley.

Notes

  • For a thicker soup, add more potatoes or reduce the amount of broth.
  • You can substitute regular bacon for turkey bacon if desired.
