Pioneer Woman Potato Soup Recipe

Delicious and creamy potato soup made with turkey bacon and chicken ham, perfect for a cozy meal.

  • 4 cups diced potatoes
  • 1 cup chopped turkey bacon
  • 1 cup diced chicken ham
  • 1 medium onion, chopped
  • 3 cups chicken broth
  • 2 cups heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup chopped green onions, for garnish

Instructions

  1. In a large pot, cook turkey bacon over medium heat until crisp. Remove and set aside.
  2. In the same pot, add onions and cook until translucent.
  3. Add diced potatoes and chicken ham, then pour in chicken broth.
  4. Simmer until potatoes are tender, about 15 minutes.
  5. Use a potato masher to mash the potatoes slightly.
  6. Stir in heavy cream, garlic powder, salt, and pepper.
  7. Heat through and serve hot, garnished with green onions and crispy turkey bacon.

Notes

  • For a thicker soup, mash more potatoes.
  • Can substitute chicken broth with vegetable broth for a vegetarian version.
