Paneer and Chickpea Curry

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 inch ginger, grated
  • 2 teaspoons curry powder
  • 1 can coconut milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups spinach, chopped
  • 1 tomato, diced

Instructions

  1. Heat oil in a pan over medium heat.
  2. Add onions, garlic, and ginger; sauté until onions are translucent.
  3. Stir in curry powder and cook for another minute.
  4. Add chickpeas, coconut milk, salt, and black pepper; simmer for 10 minutes.
  5. Fold in paneer, spinach, and tomatoes; cook until spinach wilts.
  6. Serve hot with rice or naan.

Notes

  • For a spicier curry, add red chili powder.
  • This dish can be made in advance and reheated.
