Overnight Blueberry French Toast Casserole

A delicious and easy overnight casserole that combines blueberry flavors with turkey bacon.

Ingredients

  • 1 loaf brioche bread, cut into cubes
  • 2 cups blueberries
  • 6 large eggs
  • 2 cups milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 4 strips turkey bacon, cooked and crumbled

Instructions

  1. In a large bowl, whisk together eggs, milk, vanilla, cinnamon, nutmeg, and salt.
  2. Add in the bread cubes and blueberries, gently folding to combine.
  3. Pour the mixture into a greased casserole dish, and sprinkle the crumbled turkey bacon on top.
  4. Cover and refrigerate overnight.
  5. In the morning, preheat the oven to 350°F (175°C).
  6. Bake for 45-50 minutes until golden brown and set in the center.

Notes

  • For extra sweetness, serve with maple syrup.
  • Can be made with any variety of berries.
