Experience the rich and decadent flavors of Opera Cake with a simplified twist. This delightful dessert layers coffee-soaked almond sponge cake with creamy chocolate ganache and smooth buttercream.

  • 1 cup almond flour
  • 1 cup sugar
  • 4 eggs
  • 1 tablespoon vanilla extract
  • 3/4 cup unsweetened cocoa powder
  • 2 cups heavy cream
  • 1/2 cup butter, softened
  • 1 tablespoon instant coffee granules

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine almond flour, sugar, and eggs. Mix until smooth.
  3. Fold in cocoa powder and vanilla extract.
  4. Spread the batter into a prepared baking dish and bake for 20-25 minutes.
  5. Allow the cake to cool.
  6. Prepare the buttercream by whipping the softened butter and half of the heavy cream until fluffy.
  7. Dissolve instant coffee in the remaining cream and combine with chocolate to make the ganache.
  8. Layer the cake with coffee-soaked sponge and cream mixtures, finishing with ganache on top.
  9. Chill in the refrigerator before serving.

Notes

  • For a more intense coffee flavor, add espresso in place of the instant coffee.
  • Use a serrated knife to slice the cake for clean layers.
