One Pot Lasagna Soup

  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups beef broth
  • 8 oz lasagna noodles, broken
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. In a large pot, brown the ground beef over medium heat. Drain excess fat.
  2. Add onion and garlic, sauté until soft.
  3. Stir in crushed tomatoes, beef broth, broken lasagna noodles, oregano, basil, and red pepper flakes.
  4. Bring to a boil, then reduce to a simmer and cook until noodles are tender.
  5. Stir in ricotta cheese, half of the mozzarella, and Parmesan cheese until melted.
  6. Serve hot, garnished with remaining mozzarella.
