One Pot Healthy Broccoli Mac and Cheese

A delicious and nutritious one pot recipe that combines wholesome ingredients for a healthy twist on classic mac and cheese.

  • 8 ounces elbow macaroni
  • 1 cup broccoli florets
  • 4 slices turkey bacon, chopped
  • 2 cups shredded cheese (cheddar or your choice)
  • 3 cups chicken broth
  • 1 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy.
  2. Add the elbow macaroni, broccoli, chicken broth, milk, garlic powder, onion powder, salt, and black pepper to the pot.
  3. Bring to a boil, then reduce heat and simmer until the macaroni is cooked and the liquid is mostly absorbed.
  4. Stir in the shredded cheese until melted and creamy.
  5. Serve immediately, garnished with extra cheese or broccoli if desired.
