  • 4 slices turkey bacon
  • 1 cup diced chicken ham
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 4 cups vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 cup green beans, chopped
  • 1 cup zucchini, diced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 cup uncooked pasta (fusilli or elbow)

Instructions

  1. In a large pot, cook turkey bacon until crispy. Remove and set aside.
  2. In the same pot, heat olive oil and sauté onions, carrots, and celery until tender.
  3. Add garlic and cook for 1 minute.
  4. Stir in diced tomatoes, vegetable broth, basil, and oregano. Bring to a boil.
  5. Add green beans, zucchini, kidney beans, and pasta. Simmer until pasta is al dente.
  6. Crumble crispy turkey bacon and stir into the soup.
  7. Serve hot and enjoy!

Notes

  • For added flavor, use smoked turkey bacon.
  • This soup can be made a day ahead and tastes even better the next day.
