- 4 slices turkey bacon
- 1 cup diced chicken ham
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, undrained
- 4 cups vegetable broth
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 cup green beans, chopped
- 1 cup zucchini, diced
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 cup uncooked pasta (fusilli or elbow)
- In a large pot, cook turkey bacon until crispy. Remove and set aside.
- In the same pot, heat olive oil and sauté onions, carrots, and celery until tender.
- Add garlic and cook for 1 minute.
- Stir in diced tomatoes, vegetable broth, basil, and oregano. Bring to a boil.
- Add green beans, zucchini, kidney beans, and pasta. Simmer until pasta is al dente.
- Crumble crispy turkey bacon and stir into the soup.
- Serve hot and enjoy!
