These Mini Oreo Cheesecakes are the perfect indulgent treat, offering creamy cheesecake goodness topped with crunchy Oreo cookies.

  • 1 ½ cups Oreo cookie crumbs
  • ½ cup unsalted butter, melted
  • 16 ounces cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup whipped cream
  • 8 Oreos, crushed for topping

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a bowl, combine Oreo cookie crumbs and melted butter. Press the mixture firmly into the bottom of a muffin tin lined with cupcake liners.
  3. In a large mixing bowl, beat the cream cheese and sugar until smooth and creamy.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Divide the cream cheese mixture evenly over the crusts in the muffin tin.
  6. Bake for 20-25 minutes or until the center is set. Remove from the oven and let cool.
  7. Once cool, refrigerate for at least 4 hours.
  8. Top with whipped cream and crushed Oreos before serving.

Notes

  • For a richer flavor, substitute half of the cream cheese with mascarpone.
  • Make sure the cream cheese is at room temperature to avoid lumps.
