Ingredients

  • 4 cups corn kernels
  • 6 strips turkey bacon
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • ½ cup crumbled queso fresco

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and chop.
  2. Add diced onion and garlic to the pot and sauté until translucent.
  3. Stir in the corn and cook for a few minutes.
  4. Add the chicken broth, lime juice, chili powder, and cumin; bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Blend the soup until smooth, then stir in the heavy cream.
  7. Season with salt and pepper to taste, and add the chopped turkey bacon back in.
  8. Serve hot, garnished with cilantro and queso fresco.

Notes

  • For a spicier soup, add more chili powder or diced jalapeños.
  • Can be made vegetarian by omitting turkey bacon and using vegetable broth.
