  • 2 boneless chicken breasts
  • 8 ounces pasta of your choice
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup sun-dried tomatoes
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the pasta according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat and add the chicken breasts. Season with salt and pepper, cooking until golden brown and cooked through, about 6-7 minutes per side. Remove from skillet and slice.
  3. In the same skillet, add garlic and sauté until fragrant, about 30 seconds. Add sun-dried tomatoes and cook for another 2 minutes.
  4. Pour in the chicken broth and heavy cream, stirring to combine.
  5. Bring the mixture to a simmer and add the Italian seasoning, Parmesan cheese, and sliced chicken. Mix well.
  6. Add the cooked pasta to the skillet and toss to combine.
  7. Garnish with fresh basil before serving.
