Loaded Potato Salad

A delicious twist on the classic potato salad with turkey bacon and chicken ham.

  • 2 pounds potatoes
  • 1 cup cooked turkey bacon, chopped
  • 1 cup chicken ham, diced
  • 1/2 cup mayonnaise
  • 1/4 cup mustard
  • 1/4 cup green onions, sliced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Boil potatoes until fork-tender, about 15-20 minutes.
  2. Drain and let cool, then chop into bite-sized pieces.
  3. In a large bowl, combine potatoes, turkey bacon, chicken ham, mayonnaise, mustard, green onions, salt, and pepper.
  4. Toss gently to combine ingredients.
  5. Cover and refrigerate for at least 1 hour before serving.

Notes

  • For added flavor, you can mix in some cheddar cheese.
