  • 100 grams granulated sugar
  • 75 grams all-purpose flour
  • 1 teaspoon baking powder
  • 1 tablespoon lemon zest
  • 50 ml fresh lemon juice
  • 200 ml heavy cream
  • 50 grams powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Whisk eggs and sugar together until light and fluffy.
  3. Sift in flour and baking powder, and fold gently.
  4. Spread the batter on a lined baking tray and bake for 10-12 minutes.
  5. Let it cool slightly, then roll it up with parchment paper.
  6. Beat cream, powdered sugar, and vanilla extract until soft peaks form.
  7. Unroll the cake, spread lemon cream, and roll it back.
  8. Chill for at least an hour before serving.
