  • 1 large egg
  • 1 tablespoon lemon zest
  • 1 tablespoon poppy seeds

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mix the grated zucchini, sugars, oil, egg, and lemon zest.
  3. In another bowl, combine flour, baking powder, baking soda, and salt.
  4. Fold the dry ingredients into the wet mixture until just combined.
