Lemon Garlic Orzo with Roasted Vegetables

A delicious and easy Lemon Garlic Orzo recipe featuring roasted vegetables and turkey bacon.

  • 1 cup orzo pasta
  • 2 cups mixed vegetables (bell peppers, zucchini, carrots)
  • 4 slices turkey bacon
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cook the orzo according to package instructions; drain and set aside.
  3. On a baking sheet, toss mixed vegetables with olive oil, garlic, salt, and pepper. Roast for 20-25 minutes.
  4. While vegetables are roasting, cook turkey bacon in a skillet until crispy; chop into pieces.
  5. In a large bowl, combine cooked orzo, roasted vegetables, turkey bacon, lemon zest, and lemon juice. Toss well to combine.
  6. Serve warm and enjoy!
