Lemon Chicken Orzo Soup

A comforting and delicious lemon chicken orzo soup that warms you from the inside out.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 cup orzo pasta
  • 2 cups kale, chopped
  • 1/4 cup fresh lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion, carrots, and celery, cooking until softened.
  2. Add minced garlic and cook for an additional minute.
  3. Place the chicken breasts into the pot and pour in chicken broth.
  4. Bring to a boil, then reduce heat and let simmer for 20 minutes.
  5. Remove Chicken, shred it, and return to the pot.
  6. Add orzo and cook according to package instructions.
  7. Stir in kale, lemon juice, salt, pepper, thyme, and parsley just before serving.

Notes

  • Feel free to add more veggies such as zucchini or peas.
  • Adjust the lemon juice based on your citrus preference.
