- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 6 cups chicken broth
- 1 cup orzo pasta
- 2 cups kale, chopped
- 1/4 cup fresh lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 tablespoon fresh parsley, chopped
- In a large pot, heat olive oil over medium heat. Add the chopped onion, carrots, and celery, cooking until softened.
- Add minced garlic and cook for an additional minute.
- Place the chicken breasts into the pot and pour in chicken broth.
- Bring to a boil, then reduce heat and let simmer for 20 minutes.
- Remove Chicken, shred it, and return to the pot.
- Add orzo and cook according to package instructions.
- Stir in kale, lemon juice, salt, pepper, thyme, and parsley just before serving.
Notes
- Feel free to add more veggies such as zucchini or peas.
- Adjust the lemon juice based on your citrus preference.
