Italian Sausage White Bean Soup

A warm and hearty Italian sausage white bean soup perfect for cold days.

  • 1 pound Italian sausage
  • 1 can white beans
  • 4 cups chicken broth
  • 1 cup diced tomatoes
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the Italian sausage over medium heat until browned.
  2. Add the onion, carrots, celery, and garlic, and sauté for 5-7 minutes until the vegetables are softened.
  3. Stir in the diced tomatoes, chicken broth, white beans, and Italian seasoning.
  4. Bring to a boil, then reduce heat and simmer for 20-30 minutes.
  5. Season with salt and pepper to taste before serving.
