Ingredients

  • 1 cup chopped onion
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 cup pasta of choice
  • 2 cups spinach
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the sausage over medium heat until browned.
  2. Add the onion and garlic, cooking until softened.
  3. Stir in the crushed tomatoes, chicken broth, oregano, and basil.
  4. Bring to a boil, then reduce heat and let simmer for 20 minutes.
  5. Add pasta and cook according to package instructions.
  6. Stir in spinach just before serving, and season with salt and pepper.
