  • 1 pound ground beef
  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 packet taco seasoning
  • 1 medium onion, chopped
  • 2 cups beef broth
  • 1 tablespoon olive oil
  • 1 bell pepper, chopped

Instructions

  1. Set the Instant Pot to sauté mode and heat the olive oil.
  2. Add the chopped onion and bell pepper; cook until softened.
  3. Brown the ground beef until cooked through.
  4. Stir in the taco seasoning and cook for another minute.
  5. Add the beans, corn, diced tomatoes, and broth; stir to combine.
  6. Secure the lid and set the Instant Pot to manual high pressure for 10 minutes.
  7. Once cooking is complete, do a quick release of the pressure.
  8. Serve hot with your favorite toppings.
