Instant Pot Pesto Tomato Tortellini Soup

A warm and flavorful soup made with pesto and tortellini for a quick and easy meal.

Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup pesto
  • 2 cups tortellini
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup spinach, chopped
  • salt to taste
  • pepper to taste

Instructions

  1. Set your Instant Pot to sauté mode and add olive oil.
  2. Once hot, add the onion and garlic, sautéing until softened.
  3. Add the vegetable broth, pesto, diced tomatoes, and tortellini to the pot.
  4. Seal the lid and cook under high pressure for 5 minutes.
  5. Release the pressure, stir in the spinach, and season with salt and pepper.
  6. Serve hot and enjoy!

Notes

  • For a creamier soup, add a splash of cream before serving.
