Instant Pot Olive Garden Cream of Tomato and Basil Soup

A creamy and flavorful tomato basil soup inspired by the popular Olive Garden recipe, made quickly in the Instant Pot.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 2 cups vegetable broth
  • 1 tablespoon sugar
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup heavy cream
  • 1/4 cup fresh basil, chopped

Instructions

  1. Set the Instant Pot to sauté mode and heat olive oil.
  2. Add chopped onion and garlic, sauté until softened.
  3. Stir in crushed tomatoes, vegetable broth, sugar, dried basil, salt, and pepper.
  4. Seal the lid and cook on high pressure for 10 minutes.
  5. Quick release the pressure and stir in heavy cream and fresh basil.
  6. Serve warm and enjoy!

Notes

  • This soup pairs well with crusty bread or a side salad.
  • For a spicier version, add red pepper flakes.
