Instant Pot Loaded Baked Potato Soup

A creamy, hearty soup featuring loaded baked potato flavors, made easy in an Instant Pot with turkey bacon.

  • 4 large russet potatoes
  • 1 cup chopped turkey bacon
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika

Instructions

  1. Peel and dice the potatoes.
  2. Set the Instant Pot to sauté mode and cook the turkey bacon until crispy.
  3. Add the onions and garlic, sautéing until softened.
  4. Stir in the potatoes and chicken broth, then seal and cook on high pressure for 15 minutes.
  5. Release the pressure and stir in the cheese, sour cream, salt, pepper, and paprika.
  6. Blend until smooth, if desired, or leave chunky. Serve hot.

  • For extra flavor, add green onions or chives as a garnish.
