- 1 tablespoon olive oil
- 1 pound chicken breast, cubed
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth
- 16 ounces gnocchi
- 2 cups spinach
- 1/2 cup heavy cream
- 1 teaspoon Italian seasoning
- Set the Instant Pot to sauté mode and add olive oil.
- Add chicken, salt, pepper, and garlic powder; cook until browned.
- Add onion, carrots, and celery; sauté for a few minutes.
- Pour in chicken broth and stir in the gnocchi.
- Seal the lid and set to cook on high pressure for 5 minutes.
- Quick release the pressure and stir in spinach and heavy cream.
- Add Italian seasoning, mix well, and serve hot.
