Hot and Sour Soup

Ingredients

  • 4 cups chicken broth
  • 1 cup sliced bamboo shoots
  • 1 cup mushrooms, sliced
  • 1 cup stir-fried turkey bacon, chopped
  • 2 tablespoons soy sauce
  • 1 teaspoon white vinegar
  • 2 eggs, beaten
  • 2 tablespoons cornstarch
  • 3 green onions, chopped
  • 1 teaspoon black pepper

Instructions

  1. In a pot, bring chicken broth to a boil.
  2. Add bamboo shoots and mushrooms, cooking until tender.
  3. Stir in chopped turkey bacon, soy sauce, and vinegar.
  4. Mix cornstarch with a little water, then stir into the soup to thicken.
  5. Slowly pour in beaten eggs, stirring gently to create ribbons.
  6. Add green onions and black pepper, and serve hot.

Notes

  • For extra heat, add chili paste to taste.
  • This soup can be adjusted with more or less vinegar based on your preference.
