  • 1/2 teaspoon salt
  • 3 cups old-fashioned oats
  • 1 cup marshmallow fluff
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
  3. Add the eggs and vanilla extract, and mix until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
  5. Gradually add the dry mixture to the wet mixture, mixing until just combined.
  6. Stir in the oats until evenly distributed.
  7. Drop spoonfuls of the dough onto baking sheets lined with parchment paper.
  8. Bake for 10-12 minutes or until the edges are golden brown.
  9. Allow cookies to cool completely on wire racks.
  10. In a bowl, combine marshmallow fluff, powdered sugar, and vanilla extract to create the filling. Spread over half of the cookies and sandwich with the remaining cookies.

Notes

  • For chewier cookies, do not overbake.
  • Store cookies with parchment paper between layers to prevent sticking.
