  • 4 pieces chicken thighs
  • 2 cups broccoli florets
  • 1 cup bell peppers, sliced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon, juiced and zested

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine olive oil, minced garlic, oregano, salt, pepper, lemon juice, and zest.
  3. Add the chicken thighs to the bowl and coat them well with the marinade.
  4. Place the chicken on a large baking sheet and arrange the vegetables around it.
  5. Roast in the oven for 30-35 minutes, or until the chicken is cooked through and the vegetables are tender.
  6. Let it rest for 5 minutes before serving.
