Healthy White Chicken Chili

A delicious and healthy white chicken chili recipe that is perfect for a light meal.

  • 2 cups cooked, shredded chicken
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups chicken broth
  • 1 cup corn (frozen or canned)

Instructions

  1. In a large pot, sauté onions and garlic until soft.
  2. Add shredded chicken, white beans, cumin, chili powder, salt, and pepper.
  3. Pour in chicken broth and bring to a boil.
  4. Reduce heat and simmer for 20 minutes.
  5. Stir in corn and cook for an additional 5 minutes.
