Healthy White Chicken Chili

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 4 cups chicken broth
  • 1 cup corn, frozen or canned
  • 1/2 cup cream cheese, softened
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent.
  2. Add the minced garlic and cook for another minute.
  3. Stir in the cumin and chili powder, cooking until fragrant.
  4. Add the chicken breasts and pour in the chicken broth. Bring to a simmer.
  5. Cook for 20-25 minutes, until the chicken is cooked through.
  6. Remove the chicken and shred it, then return it to the pot.
  7. Add the white beans, green chilies, corn, and cream cheese. Stir until the cream cheese is melted and combined.
  8. Finally, add the lime juice and season with salt and pepper to taste.

Notes

  • For a spicier version, add jalapeños or a pinch of cayenne pepper.
  • This chili freezes well and can be reheated easily.
