Healthy Roasted Tomato Soup with Tarragon

  • 2 pounds ripe tomatoes
  • 1 medium onion
  • 4 cloves garlic
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups vegetable broth
  • 2 tablespoons fresh tarragon, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the tomatoes in half and place them on a baking sheet with the onion and garlic.
  3. Drizzle with olive oil, salt, and pepper.
  4. Roast for 25-30 minutes until the tomatoes are caramelized.
