  • 1 cup almond milk
  • 1 large egg
  • 2 tablespoons maple syrup

Instructions

  1. In a large bowl, combine the pumpkin puree, almond milk, egg, and maple syrup.
  2. In a separate bowl, whisk together the whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  4. Heat a non-stick skillet over medium heat. Pour 1/4 cup of batter for each pancake onto the skillet.
  5. Cook until bubbles form on the surface, then flip and cook until golden brown.
