  • 2 cups diced ham
  • 1 medium onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 4 cups chicken broth
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Rinse the split peas under cold water and drain.
  2. In a large pot, combine all ingredients: split peas, ham, onion, carrots, celery, broth, and thyme.
  3. Bring to a boil, then reduce heat and simmer for about 1 hour or until peas are tender.
  4. Stir occasionally and add water if the soup is too thick.
  5. Season with salt and pepper before serving.

Notes

  • For added flavor, sauté the vegetables in a bit of oil before adding other ingredients.
  • Use a ham bone for deeper flavor if available.
