Ingredients

  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract

  • 1/2 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, mix together the gluten free flour, cocoa powder, sugar, baking powder, and salt.
  3. In another bowl, whisk together the milk, vegetable oil, eggs, and vanilla extract.
  4. Combine the wet and dry ingredients and stir until just combined.
  5. Pour the batter into the prepared cupcake liners, filling them about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  7. Let cool before serving.

Notes

  • For a richer flavor, you can add chocolate chips to the batter.
  • These cupcakes can be frosted with your favorite gluten free frosting.
