  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 tablespoon molasses
  • 2 cups rolled oats
  • 1 cup cream cheese, softened
  • 1 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, spices, and salt.
  3. In another bowl, cream together butter and sugars until fluffy.
  4. Add egg and molasses to butter mixture and mix until combined.
  5. Gradually add dry ingredients, then fold in oats.
  6. Drop spoonfuls of dough onto a baking sheet.
  7. Bake for 10-12 minutes until golden.
  8. Let cool completely.
  9. For the filling, beat cream cheese and powdered sugar until smooth.
  10. Spread filling on half of the cookies and sandwich with the other half.

Notes

  • For extra flavor, add chocolate chips to the dough.
  • These pies can be made a day in advance.
