Garlic Parmesan Spaghetti Squash

  • 1 spaghetti squash
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and remove the seeds.
  3. Drizzle the olive oil over the cut sides of the squash and sprinkle with salt and pepper.
  4. Place the squash cut-side down on a baking sheet and roast for about 40 minutes.
  5. Once done, scrape the flesh with a fork to create spaghetti-like strands.
  6. In a pan, sauté the minced garlic in olive oil until fragrant.
  7. Combine the spaghetti squash strands with the sautéed garlic, parmesan cheese, and parsley.
