French Potato Salad

A delightful take on classic French potato salad infused with turkey bacon and chicken ham for added flavor.

  • 2 pounds small potatoes
  • 4 slices turkey bacon
  • 1 cup cooked chicken ham, diced
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon red wine vinegar
  • 1/4 cup chopped fresh parsley
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Boil the potatoes in salted water until fork-tender. Drain and let cool.
  2. While potatoes are cooling, cook the turkey bacon until crispy, then crumble it into small pieces.
  3. In a large bowl, combine the cooled potatoes, turkey bacon, chicken ham, mayonnaise, Dijon mustard, red wine vinegar, parsley, salt, and pepper.
  4. Toss gently until all ingredients are combined and coated.
  5. Refrigerate for at least one hour to allow flavors to meld before serving.
