- 2 pounds small potatoes
- 4 slices turkey bacon
- 1 cup cooked chicken ham, diced
- 1/2 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon red wine vinegar
- 1/4 cup chopped fresh parsley
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Boil the potatoes in salted water until fork-tender. Drain and let cool.
