Fiesta Chicken Crock Pot Recipe

  • 2 pounds boneless, skinless chicken breasts
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup chicken broth
  • 1 onion, diced
  • 1 bell pepper, diced

Instructions

  1. Place the chicken breasts in the bottom of the Crock Pot.
  2. Add the black beans, corn, diced tomatoes, taco seasoning, chicken broth, onion, and bell pepper on top of the chicken.
  3. Stir to combine the ingredients.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Once cooked, shred the chicken with two forks and stir it back into the mixture.
