- 1 ¾ cups granulated sugar
- ¾ cup unsweetened cocoa powder
- 1 ½ tsp baking powder
- 1 ½ tsp baking soda
- 1 tsp salt
- 2 large eggs
- 1 cup whole milk
- ½ cup vegetable oil
- 2 tsp vanilla extract
- 1 cup boiling water
- 1 jar (24 oz) Morello cherries
- 2 cups heavy whipping cream
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add eggs, milk, oil, and vanilla extract; mix until smooth.
- Gradually stir in boiling water until well combined.
- Pour batter into prepared pans and bake for 30-35 minutes.
- Let cool completely, then slice each cake in half horizontally.
- Drain cherries, reserving juice.
- Whip cream with powdered sugar and vanilla until stiff peaks form.
- Layer cakes with cherries and whipped cream, repeating until all layers are used.
- Top with remaining cream and decorate as desired.

- For a stronger cherry flavor, add additional cherry juice between layers.
