  • ¾ cup unsweetened cocoa powder
  • 1 ½ tsp baking powder
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 1 jar (24 oz) Morello cherries
  • 2 cups heavy whipping cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla extract; mix until smooth.
  4. Gradually stir in boiling water until well combined.
  5. Pour batter into prepared pans and bake for 30-35 minutes.
  6. Let cool completely, then slice each cake in half horizontally.
  7. Drain cherries, reserving juice.
  8. Whip cream with powdered sugar and vanilla until stiff peaks form.
  9. Layer cakes with cherries and whipped cream, repeating until all layers are used.
  10. Top with remaining cream and decorate as desired.

Notes

  • For a stronger cherry flavor, add additional cherry juice between layers.
  • Ensure cakes are completely cooled before frosting to prevent melting.
