Easy Weeknight Meatball Subs

A quick and delicious recipe for flavorful meatball subs that are perfect for busy weeknights.

  • 1 pound ground beef
  • 4 slices turkey bacon
  • 1/2 cup breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 sub rolls
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine ground beef, chopped turkey bacon, breadcrumbs, parmesan, egg, garlic powder, Italian seasoning, salt, and pepper. Mix well and form into meatballs.
  3. Place meatballs on a baking sheet and bake for 20-25 minutes until cooked through.
  4. While meatballs are baking, warm marinara sauce in a saucepan.
  5. Once meatballs are done, place them in the sub rolls and top with marinara sauce and mozzarella cheese.
  6. Return to the oven and bake for an additional 5-7 minutes to melt the cheese.

Notes

  • For extra flavor, add chopped fresh herbs to the meat mixture.
  • Substitute ground chicken or turkey for a lighter option.
